Peanut Butter and Chocolate Sandwich Cookies

Peanut Butter and Chocolate Sandwich Cookies 

Preheat your oven to 375 degrees. 

Ingredients
1 cup butter
1 cup creamy peanut butter
1 cup sugar
1 cup packed brown sugar
3 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt

Filling: 
1/2 cup creamy peanut butter
1/2-1 cup confectioners’ sugar
1 teaspoon vanilla extract
1-2 cups semi sweet chocolate chips
5 to 6 tablespoons milk (enough for a creamy consistency) 

Directions
Mix the peanut butter, shortening, and sugars in a mixing bowl. Add the vanilla. One at a time, add eggs and mix well.


In a separate bowl, combine the flour, baking soda and salt. Mix dry ingredients into the sugar and peanut butter mixture.

Using a cookie scooper, place one inch balls onto ungreased cookie sheet and flatten with a fork to create a criss-cross pattern. Bake for 8-9 minutes at 375 degrees.

 
Cool on a cooling rack.

Melt the chocolate chips in the microwave, be cautious not to overheat and burn the chocolate.  Combine all the ingredients for the filling in a mixing bowl and mix until creamy, if the mix is too stiff, add more milk. I just experimented with this part of the recipe. Spread on one cookie and top with another.  Repeat with remaining cookies and filling.


Be ready, these things are BIG!
